Amuse-BOUCHE (tasty little dish)
“I love to eat, and I love all food – being from Texas,” says new Oro Executive Chef Moses Cruz. “But I’ve been all over the country with Hyatt … so I’ve learned to appreciate diverse cultural cuisines.” Oro’s menu will accordingly stay mostly Mediterranean, but with Cruz’s own flair. New items to watch for and savor: smoked salmon over pan-seared polenta with caper cream and red-onion foam, and a variation on the surf-and-turf featuring lobster and braised short ribs.
Come Passover, Jew and gentile alike can sample a Cruz creation that’s turned heads from Houston to New York: Texas Matzoh Ball Soup, made with roasted poblano peppers, cilantro, and epazote (especially appealing to converso families from south of the border?).
A press release this week made the rumor official: This summer, Jason Dady of Bin 555 and The Lodge will be opening Tre Trattoria, a contemporary Italian restaurant, in the dining space next to Koi Kawa on Broadway (last home to Cibal). Parkside views from an outdoor terrace are promised, which can be relished with an all-Italian wine list. Tre, just up the road from Andew Weissman?s planned Italian venture at Pearl, will serve lunch and dinner Monday-Friday.
