Zalabiyeh (Yemenite Fritters)

Ingredients:
1 kg white flour
2 tbsp dry yeast
1 tbsp sugar
1 tbsp salt
4 cups lukewarm water
200 gr butter

Mix all ingredients except butter in a big bowl and knead well. Cover and leave in a warm place to rise for about an hour, until dough doubles. Knead well again, cover and let rise for half an hour. Melt butter in large pan. Wet your hands and take a handful of dough. Stretch it until you get a 1/2 inch thick disc. Fry discs from both sides until golden. Serve immediately with crushed tomatoes and Zehoog, or with honey.
